Green, yellow, and red mandarin essential oils all come from the same fruit but are made during different times of the ripening process. Green comes from the peel of the unripe fruit. Red from the peel of the fully ripened fruit. Yellow comes from the peel of the fruit when it is partially ripe. Each oil is slightly different in aroma because the chemical profile changes subtly as the fruit ripens.
